Chitosan is gained through de-acetylation of chitin, a polymer of acetylglucosamine, the extract of prawn and crab shell. The shells are de-proteinised with bicarbonate of soda and then de-mineralised. The resulting product is washed and dried and is then known as chitosan.

Chitosan is able to trap fat mainly through an ionic bond. The main nutritional effect of chitosan is the reduction of biologically available fat. Due to its composition, chitosan is neither digested, nor adsorbed in the small intestine, but excreted undigested.
